Our Family Recipe: Classic Swedish Pepparkaka

Ingredients:

  • 0.9 cup butter, softened

  • 1 cup brown sugar

  • 0.4 cup heavy cream

  • 0.4 cup Swedish light baking syrup (or molasses)

  • 2 teaspoon ground cinnamon

  • 2 teaspoon ground ginger

  • 2 teaspoon ground cloves

  • 2 teaspoon baking soda

  • 3.5 cups all-purpose flour

Instructions:

  1. In a large bowl, mix together the butter and sugar until light and fluffy.

  2. Add the Swedish baking syrup and heavy cream and mix until well combined.

  3. In a separate bowl, whisk together the cinnamon, ginger, cloves, baking soda, and flour.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.

  5. Refrigerate the dough overnight.

  6. Preheat the oven to 400°F

  7. Roll out the chilled dough on a floured surface to about 1/4-inch thickness.

  8. Use cookie cutters to create festive shapes and place them on the prepared baking sheets.

  9. Bake for 4-5 minutes or until the edges are golden brown.

  10. Allow the Pepparkaka to cool on the baking sheets for about 30 seconds before transferring to  a rack to cool completely.
